This "garden" coffee is grown by the Konga Cooperative around the town of Yirgacheffe which is one of Ethiopia's most famous coffee growing regions. Natural or dry processed coffees are harvested and taken directly to raised drying beds where the fruit is allowed to dry on the bean in the sun. Coffee beans are like sponges, absorbing all the sweet, juicy flavors of the surrounding coffee cherry. As the fruit dries and falls off the inner bean, the result is coffee that exhibits sweet and fruity profiles. Dry processed Yirgacheffe's are coveted by connoisseurs around the world and the Konga Cooperative is known for producing particularly fine examples.
